In an effort to spend less and save more money, I have been cooking a lot lately.  So far, this is my favorite recipe.

VEGGIE SAUSAGE & SAUTEED VEGETABLES.

Ingredients: 
(5)  vegetable sausages
(1)  medium onion, diced
(4)  garlic cloves, minced
(1)  squash, cut in to 1/4″ slices
(1)  zucchini, cut in to 1/4″ slices
(1)  green bell pepper, diced
(1)  red bell pepper, diced
(1)  tbsp of extra virgin olive oil
(2)  cups of water

Directions:
Saute onions and garlic with the olive oil in a large skillet.  After five minutes, add sausages 1″ apart from each other.  Cover skillet for five minutes and let it cook.  Add the rest of the vegetables and one cup of water for moisture and flip the sausages over.  Cover skillet for ten minutes and add the second cup of water.  Cook until the vegetables are soft and the sausages are completely cooked.  Add salt for taste.  Serves three.
